As a Senior Sushi Chef at Zuma, you’ll play a key role in creating our signature dishes, combining tradition with modern flair. Zuma is a contemporary Japanese restaurant collection, inspired by the dynamic Izakaya dining style. This role will be based in Zuma Saint-Tropez, set to open in 2025. Our luxurious venue will embody the dynamic energy and sophistication that this iconic destination is known for. Featuring elegant outdoor dining, Zuma Saint-Tropez will be the ultimate dinning destination in the region.

Main Duties

Your key responsibilities will include :

• Lead the sushi team by delegating duties effectively, ensuring operational standards, safety, and consistency are upheld
• Oversee food preparation processes, minimizing waste and maintaining control of stock through regular inventory checks and planning
• Ensure the sushi area and all sections of the kitchen are ready for service, demonstrating versatility and leadership across the kitchen
• Estimate food needs accurately and plan orders for perishables and equipment, optimizing resources and minimizing excess
• Maintain high standards for equipment use and handling, reducing breakages and ensuring compliance with food safety regulations
• Support the growth of the sushi team through training, regular performance reviews, and structured onboarding for new members. Provide constructive feedback and updates to the Head Sushi Chef
