At GOURMEY, you will report directly to Marion Gaff, Team Lead of Food Science and Analytical Chemistry, and will join a team of 7 gourmates .

What will you be responsible for?

As a food science intern , you will play a pivotal role in optimizing the appearance, texture, and flavor of our premium cultivated meat products through various tasks :

Product Development and Optimization : You'll be involved in formulating food products, taking into account factors such as aroma, taste, texture, appearance, nutritional content, and shelf life.

This involves conducting experiments and trials at the lab scale to refine formulations and processes, aiming to achieve our targeted organoleptic properties.

You'll also develop expertise in understanding ingredient interactions and their impact on product quality.

• Sensory Evaluation : You'll organize and participate in sensory panels to gather data on the organoleptic attributes of our products and make necessary adjustments based on the feedback received.
• Physicochemical analysis : You'll set up and validate methods for conducting comprehensive analyses on our ingredients and food prototypes, utilizing various testing methods and equipment.

Your role will also involve identifying and implementing innovative strategies to enhance and measure the organoleptic properties of our food prototypes, including appearance, texture, taste, and aroma.

Instrumentation and stock management : You'll be responsible for managing and maintaining lab equipment, ensuring calibration and performance reliability.

Additionally, you'll oversee laboratory supplies and raw materials, including inventory tracking, ordering, and ensuring adequate stock levels to support ongoing research and development activities.

Data acquisition, data analysis, interpretation, and scientific monitoring : You'll ensure consistency in sample preparation, data gathering, analysis, and interpretation to derive robust conclusions.

Staying updated on the latest scientific literature, techniques, and technologies in the field of food science and relevant areas will also be part of your responsibilities.

Documenting Experiments Electronically : You'll maintain detailed records of formulations, food processes, and relevant measurable data, including sensory analysis results.

You'll propose hypotheses to elucidate findings and outline subsequent steps for testing these hypotheses. Effective communication of findings during weekly meetings will be crucial to drive product development.

What about you?

• Currently enrolled in an M.Sc. degree or last year engineering school in food sciences
• Ready to embark on a minimum 6-month internship with us
• Strong knowledge of food science principles : physicochemical interactions between fat, proteins, and hydrocolloids, sensory analysis techniques to assess and improve product attributes
• Basic knowledge of physicochemical analysis (texture measurements, granulometry ) is a plus
• Comfortable using online collaborative tools (Google Docs / Slack / Electronic laboratory notebook / Zoom, Notion, etc.)
• Passionate about GOURMEY’s mission to bring to market delicious and sustainable foods through innovation
• Fluent in English, both written and spoken. We are a very international team, no need to speak French!
